Greetings Chocolate and Wine Lovers:
Organic culinary herbs, flowers (lavender included), candied orange peel, dried delicate fruits such as blueberry, cherries, freeze dried raspberry, chocolate covered espresso beans, toasted hazelnut, orange zest and fleur de sel, these amazing ingredients not only beautifully compliment chocolate, they are also perfect for making chocolate arts!
In this hands-on vegan (dairy-free) artisan chocolate and wine pairing class (limit 10), you’ll make exquisite artisan chocolates (Valrhona dark chocolate from France) with your choice of the ingredients above, which we’ll relish with a Chateau de Seguin Bordeaux Superior 2013, an amazing red wine from the south of France. We’ll even raffle a bottle at the end of the class.
You’ll leave the class with samples of your artistic creations and a small bag of Provence organic culinary lavender. Two small chocolate boxes, ribbon, raffia and labels will be provided so you can beautifully package these exquisite chocolates as holiday gifts or for your own enjoyment.

She was impeccably organized and continually encouraged us to release our creative instincts and combine the herbs, flowers, salt in unique combinations. We cut up our own dark chocolate chunks, melted with orange zest and Provence culinary lavender and made three types of chocolate delights: (1) small cups of chocolate with our chosen herbs/flowers, (2) round discs of chocolate with same, and finally (3) “bark” chocolate with chocolate-covered coffee beans, freeze dried raspberries and blueberries, saffron, lavender, orange zest, crystallized lemon, etc. We did all this in such a lovely atmosphere of live Vivaldi violin accompaniment while sipping red wine from Southern France and/or lavender herbal tea and French roast coffee infused with lavender.
